Concessions Manager (Zoo)

The Concessions Manager is responsible for the Food and Beverage Concession operations at the designated facility.

Job Description: 

Provide a guest experience of outstanding quality

  • Evaluate and maintain F&B employee files and performance logs in a timely and orderly fashion following department and Audubon Nature Institute procedures
  • Aid in the development of all F&B departmental and Audubon Nature Institute procedures
  • Develop and motivate concession workers and supervisors in their daily assignments
  • Conduct monthly training and meetings with concession workers and supervisors
  • Manage all concession operations at the assigned facility
  • Interview and hire perspective employees
  • Consult with Human Resources in enforcing Audubon Nature Institute rules and regulations.
  • Develop quarterly staffing reports
  • Develop and maintain an equipment maintenance log for all concession outlets at the designated facility
  • Make schedule adjustments according to business demands
  • Maintain POS systems throughout concessions outlets

Weave quality entertainment through the guest experience

  • Assist with management and implantation of festivals and special events to include Zoo to Do, Mothers Day, Go Forth, Zoobilation, Sealabration, Boo at the Zoo and other major events hosted by The Audubon Nature Institute.
  • Participate in all Audubon Nature events that includes concession food and beverages at the assigned facility
  • Respond to all guest concerns in a timely manner
  • Make menu adjustments as needed through product analogy.
  • Generate weekly work schedules to provide visitor service consistent with institutional expectations
  • Meet with venders to discuss product mix and implementation.

Supervision: Manages the daily Food and Beverage Concessions Operations

Experience: Twp years as a manager or supervisor with proven organizational skills and customer service skills; working knowledge of food and beverage operation cost controls required. Special Event and Catering experience preferred; culinary and food production skills preferred.

Education: high school diploma; Associated College Degree preferred

Licensure/Certification: valid Louisiana driver’s license

Software Requirements: proficiency in Microsoft Office and general computer literacy

Machinery/Tools/Equipment Requirements: Must have the ability to use mobile devices, computer, fax, scanner, phone and copy machine. Must be able to operate all kitchen equipment including various culinary equipment and heavy duty equipment.

Physical Requirements:

  • Medium Work: exerting up to 25 pounds of force occasionally, or a negligible amount of force frequently to lift, carry, push, pull, or otherwise move objects. May involve sitting most of the time, but may involve walking or standing for brief periods of time.
  • Sitting or standing, bending, stooping, and the ability to carry items weighing up to 25 pounds.
  • Constant adequate range of motion and mobility required.
  • Regular near acuity with clarity of vision at 20 inches or less required.
  • Typical ability to collect and analyze numerical and written data and verbal information to reach logical conclusions and ability to determine the time, place and sequence of operations or actions required.
  • Regular talking and the ability to express and exchange ideas by means of language expected.
  • Regular hearing and the ability to perceive the nature of sounds.
  • Excellent written and oral skills and constant ability to read, record, or type data quickly and accurately required.

Environmental/Working Conditions:

  • Working long hours between breaks or meals required.
  • Ability to work flexible hours, evenings, nights, weekends and holidays as needed.
  • Ability to work under and handle stress in an appropriate manner required.
  • Ability to act with discretion and good judgment in making decisions
  • May be exposed to high, medium, or low noise intensity.
  • Constant contact with co-workers required.
  • Affinity for animals preferred.
  • Exposure to fluctuations in temperatures may be required.
  • Exposure to outdoor conditions may be required.
